Florida International University Fresh Food Student Dining Facility

In keeping with the Fresh Food commitment to a sustainable environment, the restaurant interiors are organized around ‘green initiatives’ introducing recycled finish materials, energy efficient lighting and equipment, and a tray-less service center utilizing permanent table ware, flatware and glasses. A variety of seating areas are positioned throughout the facility accommodating more than 400 patrons. The seating layout includes perimeter banquettes, group seating for informal meetings as well as more intimate table seating, some adjacent to each food stations. Back-of-house and storage and support space is minimized and relies on the multiple food service station concept to deliver a unique and broad base of food choices. Project scope required selective demolition; window replacement; all new floor, wall and ceiling finishes; and requisite mechanical, electrical, plumbing and fire protection modifications.
